This is an easy to assemble decadent appetizer showcasing our organic fall fruit and some of our delicious jarred products.
INGREDIENTS:
1 Sweet batard, sliced into ½” thick pieces
1 lb Warren pear, thinly sliced with mandolin
2 oz Apricot Pepper Jelly
5oz blue cheese
1 Pomegranate, deseeded
1 shallot, thinly sliced into rings
Basil or other winter green such as frise or radicchio, torn
½ cup of olive oil plus more for garnish
1 tbsp champagne vinegar
Salt to taste
METHOD:
- Coat both sides of sliced bread with extra virgin olive oil. Place the bread on the grill, or bake in the oven at 400 degrees for 5 minutes or until crisp
- While the bread is in the oven slice shallots and place in a small bowl with a pinch of salt and champagne vinegar
- Spread a thin layer of pepper jelly over bread
- Spread a layer of blue cheese over the pepper jelly
- Thinly slice the pear with the mandolin
- Layer the pear on top of the blue
- Garnish the toasts with pomegranate, basil /winter green, and shallots
- Drizzle with olive oil
- Serve
